You can make a more nutritious salad by sprinkling in some red cabbage.

One cup of chopped red cabbage will add about 50 milligrams of vitamin C to your salad, and will add fiber, folate, and potassium, as well. What's more, some studies have revealed that a high intake of cruciferous veggies such as cabbage may be protective against certain kinds of cancer, including bladder and breast cancer.
